Homemade Granola

This granola contains no added sugar.

1 cup oats
0.5 cup quinoa flakes
3 cups mixed nuts, cut in small pieces (cashew, pistachios, Brazil nuts, almonds, hazel nuts...)
0.5 cup shredded coconut
0.25 cup sesame seeds
0.5 teaspoon salt
0.5 teaspoon cinnamon
0.25 teaspoon cardamom
a little bit of nutmeg
2 - 2.5 cups unsweetened apple sauce

Preheat oven to 200°F (95°C). Mix all the dry ingredients in a large bowl then add the apple sauce. Mix thoroughly until crumbles begin to form. Put on a large baking tray. Bake for approximately 45-60 minutes or until dry and slightly roasted. Stir every 20 minutes to avoid ending up with a solid block of granola. Check status frequently towards the end because granola tends to get burned very easily!
Let cool and store in airtight container. Eat as is or serve with fresh fruit, yoghurt, kefir and/ or buttermilk.
